Beyond Lion’s Mane: Mushrooms and the Future of Cognitive Health 

This evidence-based course examines the role of mushrooms in supporting cognitive health and healthy aging. Participants will explore research on mushroom consumption and cognitive outcomes, review the neuroprotective potential of key compounds such as beta-glucans and ergothioneine, and evaluate the clinical evidence for Lion’s Mane mushroom and pure mycelium in mild cognitive impairment and age-related cognitive decline. Practical strategies for incorporating culinary mushrooms and Lion’s Mane preparations into patient care plans will also be discussed.  

About the Speaker

Lee Carroll, BHSc (WHM), BSc, is a medical herbalist, educator, and researcher with more than 30 years of experience in the herbal medicine industry and practitioner education. His career has included senior leadership roles with MediHerb and Integria Healthcare, spanning production and operations management, practitioner education, product development, research, and international business development, including serving as Country Manager for the United States and North American Education Manager for MediHerb. 

Lee currently serves as Chief Medical Herbalist for Real Mushrooms and maintains a private practice in Brisbane, Australia. He has presented extensively throughout Australia and North America and developed educational programs for healthcare professionals that bridge traditional herbal medicine, modern biomedical research, and clinical practice. 

His current work focuses on medicinal mushroom science, cognitive health, ergothioneine, and the synthesis of emerging research into practical frameworks for practitioners. He is currently authoring a book on ergothioneine and co-authoring a textbook on mushroom therapy with Professor Kerry Bone.
