About:

Dr. Chanelle DeGraff is a clinical nutrition specialist and Adjunct Faculty member specializing in functional and clinical nutrition approaches for gut health, autoimmune conditions, and women’s wellness. She empowers clients and graduate students through evidence-based, personalized nutrition plans, intuitive eating, and whole foods, drawing on her expertise in clinical nutrition, fasting protocols, and brain neurotransmitters. Dr. DeGraff is an experienced educator with nearly 20 years of experience in nutrition communication, community education, and professional practice, helping others improve their health and relationship with food. Her goal is to foster independent, lifelong wellness by giving individuals the tools to advocate for their health, prepare nourishing meals, and make informed lifestyle choices.

Classes Teaching:

  • Nutrition Interventions for Chronic Disease 
    • Teach graduate students how to design and implement research-backed nutrition communications and plans to prevent and manage conditions like diabetes, cardiovascular disease, and autoimmune disorders. 
  • Teaching Kitchen Laboratory
    • Lead hands-on culinary nutrition labs where students practice translating evidence-based nutrition into simple, practical, and nourishing meals.
    • Lead students in cooking skills, food literacy, and meal-planning strategies that support real-world behavior change and chronic disease prevention.
    • Support and mentorship of clients and students to foster independence and lifelong wellness.
